November and December is all about European holiday baking at Brot Bakehouse School and Kitchen in Fairfax, Vermont – both in the bakery and in the baking school, where starting November we focus on techniques and recipes of traditional European baked goods, such as Stollen and Lebkuchen.
Brot bakery is one of the few bakeries who is committed to preserving the original recipes of Germany and using authentic ingredients for their Stollen, Lebkuchen and other baked goods. For example: The German purity laws for Stollen and followed in all of our recipes and the dough for the Lebkuchen has been fermenting for 3-6 months before it’s baked.

Heike strongly believes in promoting the craft of artisanal baking, the history and culture of regional specialties, and the century-old techniques of culinary artisans around the world – all at risk of dying out due to commercialization, industrialization and standardization.
Her hands-on baking and culinary classes in the bakery’s production kitchen offer everybody the sensory experience of (re-)connecting with food regardless of experience or culinary background.
